‘Tis the season

In Canada, December has special meaning for many people and for many different reasons. For me, today, it is about family. Families coming together, sharing memories and creating memories. Whether our blood relatives, friends or colleagues, our families can can encompass many special people in our lives. For me, I include all those people in my life that make every day, that much better.

Full time brewer position available at Grimross

Brewer – Grimross Brewing Corp.

Grimross Brewing Corp. has a position for a full time Brewer. Located in Fredericton, New Brunswick Canada, we are a production brewery with attached Brewtique and Taproom. Grimross operates a 10bbl brewhouse with 20bbl unitanks, producing 1,500+bbl’s/year and growing, packaging in kegs and cans.

Qualifications / Skills / Duties:

  • Graduation from a recognized brewing program or combination of education and experience
  • Operation of a 10bbl 2 vessel brewhouse
    All aspects of cellaring
  • Yeast management, including ordering, pitching, harvesting and propagation
  • Grain to glass production of core beer lineup to specification
  • Very good working knowledge of CIP and sanitation practices
  • Manage materials inventory and production schedule
  • Packaging (Kegs / Cans)
  • Maintain QA and QC program
  • Basic computer competence
  • Give occasional brewery tours
  • Sensory analysis training is a plus


  • An extreme attention to detail
  • An interest and passion for beer recipe development
  • Willing to work evenings and weekends
  • Willing and interested in working occasional beer festivals
  • Self motivated; able to work with little supervision
  • Can do attitude and willing to do what needs done in the brewery
  • Efficient, organized and able to prioritise

Physical Demands:

  • Ability to lift object in excess of 100lbs
  • Standing for long periods
  • Stooping, twisting, reaching
  • Compensation will be based on qualifications and experience.

A toast to Dawn… my wife, my partner, my friend.

I would like to publicly thank my wife Dawn for all that she has done for me. In particular, the last two years have been extraordinary. I had a dream and Dawn became a committed full time part of that dream with me. Not only did she support me in my dream, she became a part of that dream. Thank you.

These past two years have been (almost) seven days a week and very often 12, 16 and even 20 hour days. During this time, Dawn has either been beside me, building our dream together, or picking up my slack at home and with our families while I was preoccupied. Thank you.

Dawn, when things got difficult and I had to get up early on yet another weekend morning to go and work for another long day, what made it bearable was the knowledge that you were going to be there beside me. What is amazing is that you were there day after day, week after week, month after month for the last two years. I remember every early morning weekend, every evening through the week after your day job and between driving kids to and fro and again, keeping life somewhat normal at home. Thank you.

Throughout this time, our daughters Madison and Rhys have had to fend for themselves more often than they should have. I would like to also acknowledge their support and sacrifice. Thank you.

I can see Dawn now, all covered in dust as I dump crushed grain into the mash and she stirs the mash in a steaming dust cloud on an early Saturday morning. I can also see her closely inspecting bottles as she cleans them for me to fill after a tough day at work and before driving Rhys to Jujitsu, only to come back after driving Rhys to help me clean up to hopefully get home before midnight… yet again. Thank you.

Although in support of a dream, these past to years have not been easy. I am grateful that Dawn has been there with me, willing to sacrifice evenings, weekends, vacations, family and friends, not to mention an orderly home. Thank you.

Dawn… what I can tell you without hesitation, is that if we were able to get through the past two years, I know we can get through anything together. What I can also tell you is that I could not have not have done this without you. You have been there for me, I made the right choice, I am lucky, I am grateful, thank you, I love you.

Cheval D’Or My Old Friend

The first beer brewed at Grimross was a traditional Saison and we called it Cheval D’Or. Saison’s are rustic and refreshing and one of my favorite beers! Cheval D’Or is a traditional farmhouse ale. Traditional because I use a variety of grains (barley, wheat, rye and spelt), that a farmer in Wallonia might have done, brewing with whatever he might have had on hand. I love the refreshing, rustic, earthiness of this beer!

This is only batch number 13 for Grimross. These past 13 brews have given me an opportunity to get more dialed in with the brewhouse. Look for more Saison inspired beers to be coming out of Grimross for the next little while.

Growing pains

Well here we are 4 months from selling our first beer on July 1st (Canada Day). Leading up to that day was extremely hectic. Little did I know that the hectic days leading to opening day were going to seem like a vacation compared to these last four months!

Grimross Brewing is a small (5BBL) brewery run mostly by my wife and me. We both work full time time jobs and run Grimross on evenings and weekends. This means 7 day weeks and up to 18 hour days. Before opening, we wondered if 5BBL was too big to start… today we can’t keep up. We are brewing as much and as fast as we can. Our Belgian strains of yeast take between 3 and 4 weeks to finish our beer. Such goodness takes time.

Grimross customers have been fantastic and we appreciate your business and patience. We will continue to work hard to keep beer on the shelf at the Grimross fridge at Picaroons Brewtique. We are also now selling beer on tap at two bars in Fredericton and one in Moncton.

Out next challenge is to determine how we are going to increase production to keep up with demand. Stay tuned to follow our story as we grow.


Opened on Canada Day!

It wasn’t planned, but our first day on the market was Canada Day. This is actually a fitting coincidence since Grimross Brewing seeks to become a Canadian beer even though it may have a Belgian lineage. By that I mean, there is a great deal I like about Belgian beer, but I am very much a Canadian and my recipes are very much influenced and inspired by many things Canadian.

The house yeast used at Grimross has origins in Belgium, but ingredients include local honey, local fruit, Maritime malt and we will continue to use local ingredients whenever possible. Most important, Grimross is conceived and brewed and cared for in the Maritimes by Maritimers.

So far our reception has been very positive – thank you for that – and we are excited to design new beers everyone to enjoy.
